Why do people say “ní hǎo” when it's written nǐ hǎo?

Look at the tone marks. What tone are 你 (nǐ) and 好 (hǎo) on their own?

Both are third tone, so I say both with the full dipping third tone.

Right tones, but there's a rule when two third tones meet: the first one changes to a second (rising) tone. So how should 你好 sound?

Ní hǎo, rising then third. So 很好 (hěn hǎo) would sound like hén hǎo?

Exactly. The pinyin is still written hěn hǎo, but you say hén hǎo. Try one more: how does 老虎 (lǎohǔ, tiger) sound?

Two third tones again, so the first one rises: láohǔ.

When two third tones are in a row, the first is said as a second tone: nǐ hǎo sounds like ní hǎo.
